Cheesy Rotini

Howdy partners, I'm having a grand old time making pasta over here! I genuinely don't know why I was talking like a cowboy. Anyhow, I have another amazing pasta recipe for ya'll.

After a long day at school I was craving something cheesy.


Recipe:

6 cups of pasta

9 cups of water (you could do more or less if you want to)

1 teaspoon of salt

1/4 teaspoon of black pepper

1/2 to 1 cup of shredded cheddar cheese

1/3 cup of shredded mozzarella

2 tablespoons of parsley

1 1/2 cups of tomato sauce (optional, I didn't use tomato sauce for this blog, but it doesn't mean you can't use it)


Roasted Vegetables

1 zucchini

2 cups cherry tomatoes

2 tablespoons olive oil

1/4 teaspoon minced garlic

salt and black pepper


Directions:

1. Preheat oven to 400F. In a sheet pan, spread olive oil and then lay the chopped vegetables on the pan. Add the minced garlic, salt, and black pepper to the vegetables.

Roast for 25 minutes.

2. While vegetables are roasting, boil 9 cups of water with a teaspoon of salt. Follow directions on the box of pasta you're using.

When the pasta is tender, strain them.

3. Add the pasta back to the pot with the cheddar and mozzarella, add more cheese if needed.

4. Then add parsley and tomato sauce(if using). Mix the pasta with the vegetables, top with parmesan cheese.

5. Enjoy!



I know you can see the cheese, but trust me it's there.
